Tofu Scramble with Roasted Potatoes
Bell Pepper
1/2 onion
2 Tbls Nutritional yeast
3 potatoes cubed
garlic powder
Salt to taste

Spray a baking sheet with non stick spray and put the cubed potatoes on and then spray them with non sticking spray. Put in the oven on 350 degrees for about 30 minutes or until tender.

Meanwhile drain water from Tofu. In a large bowl sramble with your fingers. Saute onion and peppers in frying pan(I use a small amount of water). Once tender add the tofu, nutritional yeast, and seasoning. Let cook and continue to scramble until the tofu gets the dryness you would like.

Once potatoes are done divide into 3 bowls and divide the tofu on top of those. That’s it you can keep for a couple days  in the fridge for a yummy and healthy meal.
