Savory vegetable stew


1 Onion diced
5 cloves Garlic
4 T Olive Oil (I used less in your batch, but often I just use water)
2 T Ginger (this is the key! I use fresh Ginger and about 2 Inches that I’ve peeled, I put it in the whole chunk)
1/4 C Soy Sauce ( Braggs)
3 Potatoes, large and diced
3 Carrots, large diced
3 Celery stocks, diced
2 C Veggie Beef (Optional, I used pearled barley instead)
1/4 C Corn Starch (optional)
2 14 oz cans of Italian diced tomatoes

Saute onions and garlic with oil until gloss. Add remaining ingredients holding back the cornstarch. Add enough water to completely cover vegetables. Bring to a boil for 20 minutes. Taste broth to adjust if needed (like adding some salt). Thicken with cornstarch and water slurry and simmer. Great over rice.
